About the bar This dark 74% chocolate bar from Dos Estaciones has been combined with crunchy roasted cocoa nibs, which work well alongside the woody and cherry notes of the chocolate. About the maker Dos Estaciones was born in 2020, after Corinna and her husband Alex first experimented with bean-to-bar chocolate while living in Australia. Corinna is a German pastry chef, and had worked with chocolate for many years – but in that moment, when the cacao was crushed and the smell of acidic chocolate hit her, Corinna knew that bean-to-bar was her calling.

Corinna and Alex decided to travel through South and Central America to learn more about the environment where cacao grows, and how the cacao is processed. Before long, the pair had stumbled upon the village of Chazuta in Peru; after living with the owners of the plantation for a whole month, it became the Corinna and Alex’s goal to import the cacao directly from Chazuta, and use it to make their very own bean-to-bar products. The beans Dos Estaciones’ bars are all sourced from Chazuta, a small village in the region of San Martin, Peru.

The village is located about an hour south-east of Tarapoto, and is positioned 250 metres above sea level, right at the foot of a branch of the Amazon river, named the Huallaga River. Due to its close proximity to the water, boats are the main means of transport.
